In this riff on the Pimm’s Cup, fresh strawberries add some fruity sweetness, while more than a bit of Cocchi Americano ups the bitter profile perfectly.

 

1 ½ oz. Cocchi Americano
½ oz. Pimm's No. 1
½ oz. London dry gin
2 strawberries
½ oz. fresh lemon juice
¼ oz. simple syrup (1:1)
barspoon Clement Creole Shrub
club soda
Tools: mixing tin, strainer, barspoon
Glass: double rocks

 

In a mixing tin, muddle the strawberries with the lemon juice and simple syrup. Add the remianing ingredients, along with ice, shake and double strain into an ice-filled rocks glass. Top with club soda.
