Winter G and T

A wintertime twist  on a classic Gin and Tonic, this cocktail combines a favorite wintertime fruit with warming seasonal spice.

2 oz. pomegranate-infused gin
3/4 oz. winter tonic syrup
2 oz. club soda
Tools: barspoon
Glass: Collins
Garnish: long orange twist

Combine all ingredients in an ice-filled glass, stir to combine and garnish.

Winter Tonic Syrup
1 bottle red wine (something inexpensive that you’d drink on its own)
1 cinnamon stick
6 allspice berries, whole
6 cloves, whole
The zest and juice of 1 orange
15 grams cinchona bark
1 whole nutmeg, grated
Simple syrup (1:1)

Combine all ingredients in a large saucepan, bring to a boil, cover and reduce heat to low and simmer for 20 minutes. Strain through a double layer of cheesecloth and pour into a measuring cup. Add an equal amount of simple syrup to the tonic, stir to combine, and store in a bottle in the refrigerator.

Pomegranate-infused Gin: In a large jar, combine 1-750 ml. bottle of gin with the seeds from 1 whole pomegranate and macerate for one week. Strain into a glass bottle and store in a cool, dark place.
