This strawberry cocktail from bartender Brad Farran is a great use of fresh strawberries and a refreshing balance of sweetness and acidity.
1 1/4 oz. light rum 1/2 oz. simple syrup (1:1) 1/2 oz. pomegranate balsamic drizzle 1/2 oz. fresh egg white (pasteurized if you like) 3 strawberries, topped and halved 1/2 lime, quartered 1 barspoonful superfine sugar splash soda Ice cubes Tools: muddler, shaker, strainer Glass: Collins Garnish: sprig of mint
In a shaker, muddle strawberries, limes and sugar. Add rum, syrup, pomegranate drizzle, egg white and ice and shake vigorously. Strain into an ice-filled glass, add a splash of soda and garnish.
