At Jose Andres’ sleek DC cocktail lounge, Barmini, this cocktail is a consistent favorite for beating the city’s oppressive summer stickiness. South of the border-meets-the tropics, the drink is a delicious exercise in escapism.  


2 oz. reposado tequila
1 oz. pineapple syrup
¼ oz. maraschino liqueur
¼ oz. Hum liqueur
Tools: shaker, strainer
Glass: rocks


Shake all ingredients vigorously with ice in a shaker. Strain into a rocks class over one large ice cube.


Pineapple Syrup
2 cups pineapple juice
½ cup sugar


Bring the pineapple juice to a gentle boil. Add the sugar and stir until it has dissolved into the juice. Remove from heat and store in the refrigerator until use.
