Spokane may be known as the Lilac City, but this cocktail looks to tea, citrus and fresh mint for flavor.
4-5 fresh mint leaves
3/4 oz. fresh lemon juice
1 1/2 oz. tea-infused gin
3/4 oz. simple syrup (1:1)
Tools: muddler, shaker, strainer
Garnish: fresh mint sprig
In a shaker, gently muddle mint and lemon juice. Add the remaining ingredients, except club soda, and shake with ice. Strain into an ice-filled glass, top with soda and garnish.
Tea-Infused Gin: Add 2 Tbsp. loose-leaf tea of your choice to 750-ml. of gin. Let infuse overnight and strain into a clean glass bottle before using.
