Lelani Volcano

Frothy, pink and just a bit fantastical, this over-the-top cocktail embodies the sense of play and imagination that makes tiki drinks so fun. The sweetness of the guava nectar is tempered by the zing of pineapple and lime juice, while the coconut rum brings plenty of boozy bite.


3 oz. guava nectar
½ oz. pineapple juice
¾ oz. fresh lime juice
¼ oz. demerara syrup
2 ½ oz. coconut rum (Hale Pele uses Cruzan)

Tools: shaker tin
Glass: Schooner or goblet
Garnish: pineapple frond or edible flower (optional)


Combine all ingredients in a shaker tin with 1 ½ cups crushed ice. Shake and pour the contents into a large schooner or goblet. Garnish and serve.
