Sanctuary on Camelback Mountain and Debby Wolvo

Lady Sage

Sage and citrus add a savory brightness to this gin-based sour.
 
2 fresh sage leaves
3/4 oz. freshly pressed lemon juice
2 oz. gin (Magarian uses Aviation)
3/4 oz. simple syrup (1:1)
1 egg white
Tools: shaker, muddler, strainer
Glass: cocktail or coupe
Garnish: fresh sage leaf
 
In the base of a shaker, gently muddle sage and lemon juice. Add remaining ingredients and shake hard, with ice. Strain into a chilled glass and garnish.
