Islay Dawn

The notoriously sea-salty, smoky bouquet of Islay Scotch is brought into the light with the addition of juicy-sweet elements like pear liqueur, fresh lemon juice and honey.

 

2 oz. Islay Scotch
½ oz. pear liqueur
½ oz. honey syrup (1:1)
½ oz. fresh lemon juice
¼ oz. simple syrup (1:1)
Tools: shaker, strainer
Glass: sour glass

 

Combine all ingredients in an ice-filled shaker. Shake vigorously and strain into a chilled glass. Serve.
