Bitter Mai Tai

“I love a good Mai Tai,” says Brooklyn bartender Jeremy Oertel, “and I thought it would be fun to take the classic recipe and see what kind of interesting new flavors I could introduce to it.” Oertel’s resulting cocktail calls Campari to the forefront, while Jamaican rum, orgeat and fresh lime keep it close on track with the more traditional Mai Tai.


1 1/2 oz. Campari
3/4 oz. Jamaican rum
1/2 oz. orange Curaçao
1 oz. fresh lime juice
3/4 oz. orgeat
Iced cubes
Crushed ice
Tools: shaker, strainer
Glass: double Old Fashioned
Garnish: mint sprig


Combine liquid ingredients and ice cubes in a shaker and shake well. Strain into a double Old Fashioned glass filled with crushed ice. Garnish.
